  • 6 tablespoons light mayonnaise
  • 1/3 cup plain nonfat Greek yogurt
  • 2 tablespoons sugar (or 2 tablespoons sugar substitute or 3 packets)*
  • 1 tablespoon white wine vinegar
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • SALAD
  • 2 cups chopped green apples (about 2 medium apples)
  • Juice of 1 lemon (about 3 tablespoons)
  • 5 cups shredded green cabbage
  • 1 cup thinly sliced celery
  • 2 medium green onions, white and green parts, thinly sliced

1. For the dressing, whisk together all the dressing ingredients in a small bowl.

2. For the slaw, in a large bowl, place the apples and lemon juice and toss to combine. Add the cabbage, celery, and green onions. Pour dressing over the salad and toss.

The creamy, crunchy texture of this salad is best when freshly dressed. The salad mix can be made up to one day in advance and held in the refrigerator. The dressing can be made up to 3 hours before serving. Once you toss the salad with the dressing, it’s best to serve it within 2 hours.
