Ingredients

  • 2 filets salmon (abt 10-oz each)
  • flour
  • 4 TBL olive oil
  • 1-2 tsp freshly chopped garlic
  • 2 tsp capers
  • 1/4 C butter
  • 1/4 C white wine
  • S & P to taste
  • juice of 1/2 lemon

Preparation

Step 1

lightly flour salmon
brown quickly in olive oil
bake 10 min @ 350

drain oil from saute pan
add garlic, capers, butter, wine & lemon juice to salmon

simmer slowly until sauce thickens & is reduced by abt. 1/3rd
