Ingredients
- 1 1/4 cups AP flour (white whole wheat flour works as well)
- 1 cup yellow corn meal
- 2/3 cup granulated sugar
- 1 tsp salt
- 1 Tbsp baking powder
- 1 1/4 cup unsweetened almond milk
- 1/3 cup canola oil (you can substitute the oil for applesauce)
- **I like to add chopped roasted jalapeños, roasted red bell peppers and caramelized onions. If you add any ingredients that add moisture, then add an additional 1/8 cup of flour and cornmeal

Step 1
1. preheat the oven to 400 degrees F. Lightly grease a 8x8 or 9 inch round baking pan.
2. In a large bowl, combine all of the dry ingredients and whisk everything until well blended.
3. Add the oil (or applesauce if using) and the almond milk
4. Bake 20-25 minutes until toothpick comes out clean.
