Ingredients
- 6 C bite-size broccoli florets
- 1 medium red bell pepper, cut vertically into 1/2 inch strips
- 1 medium red onion, sliced vertically into 1/4 inch slices (about 1 C)
- 4 garlic cloves, sliced
- 1 1/4 t Italian herbs
- 1/2 t coarse salt
- 1/8 t pepper
- 3 T olive oil
- 1 T lemon juice
Preparation
Step 1
Preheat oven to 425 degrees.
In a large bowl, combine vegetables an garlic. Sprinkle with seasonings. Drizzle oil over the top and mix.
Place vegetables in a shallow baking pan and bake 20 minutes, mixing once, until broccoli is browned in spots and tender. Add lemon juice.
