- 2 T olive oil
- 1 onion chopped
- 2 garlic cloves, minced
- 1 green pepper diced ****
- 2 c mushrooms, chopped
- 2 lbs ground beef
- 1 t salt
- 1/2 t pepper
- 4 T butter
- 1/4 c flour
- 2 c milk
- 1/2 c sour cream
- 16 oz bag of frozen green beans in pieces
- 3 c shredded cheddar cheese separated
- 2 lb bag of tater tots

Step 1
Preheat oven to 350 and grease 9x13 pan.
In a large heavy bottom skillet, heat the oil over med heat. Add the onions and green peppers and sautee until softened. Add the garlic and mushrooms and cook for about 3-5 min min, or until the mushrooms have begun to release their liquid.
Add the beef, salt, and pepper and increase the heat to med high. Cook, stirring often, until the beef is browned. Remove from heat and drain most of the grease.
Melt the butter in a med saucepan over med heat. When it is completely melted, whisk in the flour and cook for a minute or two, whisking constantly. Slowly add the milk, whisking the entire time until the mix is smooth and begins to thicken, then remove from heat and whisk in the sour cream.
Pour the creamy mix over the ground beef, add the green beans and stir to incorporate.
Pour the beef mix in the bottom of the prepared casserole dish and flatten with the back of a spoon. Add half of the shredded cheese and then layer the tater tots on the cheese.
Bake in the oven for 30-40 min or until tater tots are browned and then remove and sprinkle the remaining cheese on top. Put back in the oven for another 10 min or until the cheese is melted.
