Ingredients
- 1 1/2 lb carrots
- 1 tablespoon olive oil
- 10 mint leaves
- 1 tablespoon celery leaves
- 1/4 teaspoon celery seed
- salt pepper
- 2 tablespoons apple cider vinegar

Preparation
Step 1
Slice carrots in to 1/3" rounds.
Warm herbs in oil to bring out the fragrance. Add carrots, salt and vinegar. Bring to a boil and lower the heat. Simmer covered for about 20 min, until carrots are tender.
Garnish with extra mint and celery leaves.
Eat cold or warm.
