Ingredients
- 1 small onion chopped
- 1 T butter
- 3 c chicken broth
- 3 med carrots, cut into small slices
- 2 med potatoes, peeled and cubed
- 2 c cubed cooked chicken
- 2 T minced fresh parsley
- salt and pepper to taste
- 1/4 c flour
- 1 c milk
- 8 oz cream cheese, cubed

Preparation
Step 1
In a large saucepan, sauté onion in butter. Add the broth, carrots and potatoes. Bring to a boil. Reduce heat and cover to simmer for 15 min. Add the chicken, parsley, salt and pepper and heat through.
Combine flour and milk until smooth and add to the veg mix. Bring to a boil and cook and stir for 2 min or until thickened. Reduce heat and add cream cheese, cook and stir until melted.
