Ingredients

  • 1/4 lb mild italian sausage
  • 2 tablespoons butter or margarini
  • 1 small onion,finely chopped
  • 1 clove garlic,minced or pressed
  • 2 medium-size ripe tomatos,peeled,seeded & chopped
  • 1/2 cup each canned tomato sauce and dry white wine
  • 1/4 teaspoon salt
  • 1/2 lb (about 2 1/2) cups rigatoni
  • Salted water
  • 1/4 cup fresh or frozen peas
  • 1/2 cup whipping cream
  • Grated Parmesan cheese

Preparation

Step 1

Remove casing from sausages,crumble meat.In a deep heavy frying pan over medium-low heat,melt butter.Addsausage and onion,and cook slowly stirring occasionally,until sausageis lightly browned.Mix in garlic,tomatoes,tomato sauce,wine and salt,increae heat to medium and bring mixture to a boil.Cover,reduce heat and simmer for 15 minutes.Meanwhile cook rigatoni in boiling salted water according to package directions until al dente.DRain well and place in a warm serving bowl.Keep warm.Mix peas and cream into sausage sauce.Increase heat to medium high and cook,stirring until sauce boils all over in large shiny bubbles and is slightly thickened.Spoon over rigatoni and mix lightly.Serve with Parmesan cheese to add to each serving.
