Ingredients

  • Glaze:
  • 6 Eggs, separated
  • 2 cups Sugar
  • 2 Tbsp Vanilla Sugar
  • 1 3/4 cups Flour
  • 1 cup Oil
  • 1/2 cup Orange Juice
  • 2 tsp Baking Powder
  • 2 Tbsp Coffee and 2 Tbsp Sugar dissolved just under 1/4 cup hot water
  • 3/4 lb Confectioner's Sugar
  • 3 Tbsp Oil
  • 2 Tbsp Coffee dissolved in 1/3 cup Boiling Water

Step 1

Preheat oven to 350.
Using an electric mixer, beat egg white until stiff. Add the sugars and beat until combined. Slowly add the flour, oil, orange juice, baking powder and egg yolks.

Grease a bundt pan very well and fill with 3/4 of the batter. Add the coffee to the remaining batter and mix until it is incorporated. add the coffee batter to the pan and mix gently to create a marbled effect.

Bake @ 350 for approximately 50 minutes, or until a cake tester inserted into the center of the cake comes out clean. Allow the cake to cool for 5 minutes, then remove from pan and transfer to a rack to cool completely, about half an hour.

To prepare the glaze, combine the ingredients and beat well with a whisk until the glaze is smooth, with no lumps. Drizzle the glaze over the cake, allowing it to drip down the sides.
