  • 1 lemon
  • 6 artichokes
  • 1/2 cup white wine
  • 1/4 cup extra virgin olive oil
  • 1/2 cup water
  • 1 teaspoon of coarse salt
  • 1/4 teaspoon of red pepper and more for sprinkling
  • 2 tablespoon minced garlic ( 5 cloves )
  • 2 tablespoon of flat leaf parsley
  • 1 tablespoon of oregano
  • 1 tablespoon of mint leaves

Preparation

Step 1

Preheat oven to 350
1/2 lemon and squeeze juice into a large bowl filled with cold water
work with one artichoke at a time, cut off outside hard leaves, trim off sharp leaves cut in half lengthwise.
scrap fuzzy choke from heart and put into cold water.
continue until all are in water bowl.


drain artichoke and place in stove to oven cookware with open side up
pour wine, oil and water over artichokes
sprinkle with remaining spices
cook over high heat until boiling
cover and place in oven for 45 minutes, braise
