Ingredients

  • 1 lb chicken
  • 6 T soy sauce
  • 1 t ginger
  • 3 T vegetable oil
  • 1 1/2 c carrot
  • 1 1/2 c cauliflower
  • 6 oz pea pods
  • 4-6 green onions
  • 1/2 c cold water
  • 2 T corn starch
  • 4 oz mushrooms (keep juice)
  • 1/2 t sugar

Preparation

Step 1

Marinate chicken in soy sauce & ginger for 30 minutes. Heat 1 T oil; cook carrots 2 minutes; add mushroom liquid, cover & cook for 4 minutes. Remove. Heat 1 T oil; cook cauliflower & pea pods 2 minutes; add onions & mushrooms and cook for 2 minutes. Remove. Heat 1 T oil; cook chicken 2-3 minutes. Add vegetables, water corn starch & sugar & cook until thick. Serve with rice.
