Ingredients
- 1 c onion, finely chopped
- 1 c celery, finely diced
- 2 c potatoes, finely diced
- 2-6 1/2 oz cans minced clams & juice
- 3/4 c butter
- 3/4 c flour
- 1 qt half & half
- 1 1/2 t salt
- pepper
- 2 T wine vinegar

Preparation
Step 1
Pour clam juice over vegetables in small sauce pan. Add enough water to barely cover & simmer, covered until barely tender. Melt butter, add flour & blend. Cook, stirring constantly, add cream & stir with whisk & whip until smooth & thick. Add undrained vegetables, clams & vinegar. Heat & season to taste.
