Ingredients
- vegetable oil
- 10 oz orange marmalade
- 3 T spicy brown mustard
- 1 T fresh lime juice
- 1 lb prawns, peeled & deveined with tails intact
- 3/4 c biscuit mix
- 1 T sugar
- 3/4 c beer (apple juice)
- 3/4 c flour
- 2 1/2 c flaked coconut

Preparation
Step 1
Pour oil to a depth on 3” & heat to 350º. Combine marmalade, mustard & lime juice in a small saucepan. Cook over medium heat until marmalade melts. Cool Combine biscuit mix, sugar & beer stirring until smooth. Coat prawns with flour & dip in beer mixture. Gently roll coated prawns in coconut. Cook for 2 minutes or until golden brown. Drain on paper towels and serve with orange lime dip.
