Ingredients

  • Sauce:
  • 2 whole chicken breasts (4 breast pieces, boneless/skinless)
  • 2 red bell peppers
  • 1 orange or yellow bell pepper
  • 1 small red onion
  • 2 tsp. vegetable oil
  • 2 tsp. Penzey’s BBQ of the Americas seasoning
  • 2 cups shredded lettuce
  • 12 soft tortilla wraps
  • 1/2 cup sour cream
  • 1/4 cup ketchup
  • 1/2 to 1 tsp. Penzey’s BBQ of the Americas seasoning

Rinse chicken; pat dry. Cut onion into rings, qtr bell peppers. Brush chicken and veggies with oil, then sprinkle with seasoning. Grill over medium heat, 4-6 mins per side, until done. The veggies should be off of the direct heat so they don’t burn – same amt of grilling time as chicken. Shred lettuce and warm tortilla wraps if desired. Whisk together ingredients for sauce. Slice chicken and peppers; dice onion. Spoon about a tbls. of sauce in the middle of each wrap, layer chicken and veggies/lettuce, wrap and serve. A little dab of sauce helps keep the wraps closed.
