- 2 tbsp butter
- 1 shallot, finely chopped
- 1/3 cup brandy
- 1/3 cup whipping cream
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- Beef Oxo

Step 1
Melt butter over medium heat; cook shallot, stirring, until softened, about 4 minutes. Add brandy; cook, stirring, until reduced by half, about 30 seconds. Add cream, mustard, salt and pepper and a bit of beef Oxo. Cook, stirring, until thickened, about 30 seconds. If necessary, stir in water, 1 tsp at a time, to loosen sauce.
