Ingredients

  • 1 pate brisée
  • 8 eggs
  • 1 cup heavy cream
  • 1 tsp salt
  • 1 Tbsp cracked pepper
  • 1/2 tsp nutmeg
  • 1 cup smoked ham, chopped or crisp bacon, crumbled
  • 2 cups gruyere or fontina cheese, grated
  • 3 Tbsp parmesan cheese, grated
  • 2 Tbsp unsalted butter, melted

Step 1

Roll out pastry to about 1/4" thickness on floured work surface. Roll up over rolling pin and unroll over quiche dish. Trim sides and crimp rim by pinching and set aside. Mix together eggs, cream, salt, pepper and nutmeg with a whisk. Pour one-third of mixture into quiche pan lined with pastry. Sprinkle the meat in an even layer over the egg mixture. Sprinkle Gruyere in an even layer and pour remaining egg mixture over all. Sprinkle Parmesan over top and drizzle butter over parmesan. Bake in preheated 350° f oven for 65 minutes or until entire quiche domes up and browns nicely. Quiche will fall when removed from oven.
