Ingredients

  • 12 oz. regular lasagna noodles
  • 1 lb. pork sausage
  • 1 (10 oz.) pkg. frozen chopped spinach (thawed
  • and well-drained)
  • 1 (17 oz.) jar Alfredo sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg
  • 2 C. shredded cheddar
  • 1 (15 oz.) ricotta cheese
  • 1/2 C. Parmesan
  • 1 C. mozzarella

Preparation

Step 1

Soak noodles in hot water for 15 minutes. Brown sausage. Drain noodles, set aside. Drain sausage,
add spinach, Alfredo sauce, salt, and pepper. In a bowl, combine the egg, cheddar, ricotta, and parmesan.
Mix well. In an ungreased 9 x 13 pan, layer 1/3 of the sausage mixture, noodles, and cheese
mixture. Repeat layers twice. Sprinkle with mozzarella. Cover and bake at 350 for 45 minutes. Let
stand for 15 minutes before cutting.
*This is a great way to get kids to eat spinach. My daughter calls it the “green lasagna”. It has also
been well-received as a meal for new mothers.
