  • 1 1 1 cup all-purpose flour
  • 1/4 1/4 1/4 teaspoon baking powder
  • 1/2 1/2 1/2 teaspoon baking soda
  • 1/4 1/4 1/4 teaspoon salt
  • 1 1 1 cup rolled oats
  • 1 1 1 cup semisweet chocolate chips
  • 1/2 1/2 1/2 cup chopped pecans
  • 1/2 1/2 1/2 cup coconut, toasted, if desired

Heat oven to 350°.

In a large mixing bowl with electric mixer, cream butter and sugars until light and fluffy. Beat in egg and vanilla until well blended. Slowly beat in the flour, baking powder, soda, and salt. Stir in oats, chocolate chips, pecans, and coconut. Using a small cookie scoop or tablespoon, drop dough onto a cookie sheet lined with silicone mat or lightly greased. Bake for 12 to 14 minutes, or until lightly browned.

Makes about 3 dozen 2- to 2 1/2-inch cookies.
