Ingredients

  • 2 1/2 cups flour
  • 1 cup yellow cornmeal
  • 3 Tbsp. sugar
  • 2 tea. baking powder
  • 1/4 tea. salt
  • 8 Tbsp. cold butter
  • 1 cup shredded cheddar cheese
  • 1 cup roasted pepper and tomato salsa (or thick salsa)
  • 1/2 cup heavy cream

Step 1

Combine flour, cornmeal, sugar, baking powder and salt in a mixing bowl. Cut butter into flour mixture until crumbly.

Add cheese, salsa and cream to flour mixture; stir until flour is moistened and dough forms a ball.

Turn out onto a lightly floured surface and knead gently until smooth, adding additional flour as needed. Pat or roll out to 1/4" thickness. Cut with a floured 2 3/4" biscuit cuter. Place on an ungr3eased baking sheet.

Bake in a 425 degree oven for 15-20 minutes or until lightly browned.
