Thick and Fudgy Brownie Cookies

These cookies are incredibly thick, fudgy, taste exactly like a brownie - in my opinion, at least - and melty chocolate chips just add to their tastiness. They're nice and soft all over and have a great deep chocolate flavor. I've made them many times with great success!

Ingredients

  • 1/2 cup (1 stick) butter, softened at room temperature
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 cup special dark cocoa powder - regular can be substituted, but special dark is
  • recommended to achieve a deep chocolate flavor
  • 1/4 tsp. baking soda
  • 1 tsp. salt
  • 3 T. heavy cream - milk 2% or higher can be substituted,
  • but it may create some slightly different results
  • 1 cup chocolate chips

Preparation

Step 1

Preheat the oven to 350º. Prepare a cookie sheet with parchment paper.


In a mixing bowl, cream together the butter and sugars. Add in the egg and egg yolk, along with the vanilla.


In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add half to the butter mixture. Pour in the 3 T. of cream, and mix until combined. Add the remaining dry ingredients and mix well. Fold in the chocolate chips.


Scoop approximately 2 T. of the dough on to the cookie sheet. Flatten to about 3/4 inch thickness. Leave 1-1/2 inches between each cookie. Bake for 9-11 minutes. The tops of the cookies should be puffy, rounded, and set. Let cool for a couple minutes on the pan before transferring off to cool completely.


Makes approx. 2 dozen (24) cookies
