Ingredients
- 2 1/2 cups chopped vegetables (such as broccoli, red peppers, onions, mushrooms)
- 1 Tbs. olive oil
- 2 cups frozen hash browns
- 6 eggs
- 1/4 cup water
- 2 tsp. Dijon mustard
- 1 cup shredded cheddar cheese

Step 1
Preheat broiler
Using 10 inch skillet cook vegetables and hash browns in olive oil over medium heat for 5 minutes.
Mix eggs with water and mustard. Pour mixture into skillet. Cook until almost set.
Top with cheese and broil until cheese is melted.
