Ingredients

  • handfull of shreded ham or other meat
  • chopped onion
  • 8 eggs
  • 1/4 cup milk
  • 1/2 tsp oil
  • 1/2 tsp baking powder
  • salt & pepper
  • shredded cheese

Preparation

Step 1

Saute ham and onion and set aside.

Whisk together eggs, milk, oil, baking powder and salt and pepper.

Spray muffin pan with oil and divide the onion and ham into 12 cups, and top with some shredded cheese.

Divide the egg mixture between the cups.

Bake 375° over for 20 to 25 minutes. Let sit in pan for 5 minutes before removing.
