  • 1/2 LEMON
  • 1/2 ONION
  • DRIED THYME
  • KOSHER SALT AND FRESHLY GROUND PEPPER

Preparation

Step 1

CLEAN CHICKEN INSIDE AND OUT. PLACE IN ROASTING PAN OR BAKING DISH.
PUT THE ONION HALF AND LEMON HALF IN THE CAVITY AND SPRINKLE WITH SALT, PEPPER AND THYME ALL OVER THE INSIDE AND OUTSIDE OF CHICKEN.
BAKE, UNCOVERED, AT 275 DEGREES FOR 3 TO 4 HOURS. IF CHICKEN IS SMALLER USE THE LESSER COOK TIME.

TEMPERATURE SHOULD READ 180 DEGREES IN THICKEST PART.

LET THE CHICKEN REST FOR 10-15 MINUTES BEFORE CARVING.
