Ingredients
- Saute together in a little oil:
- Groundnut Stew
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 Tbsp. fresh ginger, chopped
- 1 Tbsp. chili powder
- a pinch of fresh nutmeg, grated
- Add and brown:
- 1 lb. chicken breasts
- Add:
- 1 qt. tomatoes (home-canned if possible)
- 6 oz. tomato paste
- 1 cup water
- Cover and simmer, 20 minutes, or until meat is tender.
- In a small bowl mix:
- ¾ cup natural peanut butter
- ¼ cup liquid from stew

Preparation
Step 1
Slowly stir peanut butter mixture into stew. Cover and simmer, stirring frequently, another 20 minutes on low. Add more water to thin, if necessary. Add salt to taste.
Serve with rice and toppings in a curry-like fashion (suggested toppings: peanuts, coconut, raisins, onions, coconut, raisins, onion, banana, peppers, mango, tomatoes, and pineapple)
