Ingredients
- 7 pounds Turkey breast, uncooked
- 3 Tablespoons Apricot preserves
- 1 teaspoon Cumin
- 1 teaspoon dry mustard
- 1 teaspoon Sage
- 1/2 teaspoon Thyme
- 1/2 teaspoon Salt
- 1/4 cup Extra-Virgin Olive Oil

Preparation
Step 1
1. Rinse turkey breast with cold water and pat dry with a paper towel.
2. Combine in a small bowl the apricot preserves, cumin, mustard, sage, thyme, and salt, forming a sticky paste. Rub the paste under and over the skin.
3. Place turkey on the 1 inch rack and rub in olive oil.
4. Roast on power level high for 12 minutes per pound Or until juices run clear.
5. Let turkey rest for 10 minutes before serving.
Tips
If cooking from frozen roast on power level high for about 15 minutes per pound.
