Ingredients
- 3/4 cup chopped onions
- 1 pound ground beef
- 4 tbs unsalted butter, divided
- 2 minced garlic cloves
- 1 cup diced celery
- 1 cup diced carrots
- 1 tsp dried basil
- 1 tsp dried parsley
- 4 cups chicken broth
- 4 cups diced and peeled
- potatoes
- 1/4 cup flour
- 1 1/2 cups evaporated milk (in
- can)
- 2 cups cubed american
- cheese (the kind you use for
- grilled cheese)
- 1/2 tsp salt
- 1/4 tsp freshly ground black
- pepper
- 1/2 cup sour cream

Preparation
Step 1
In a saute pan, brown the ground beef. Drain and set aside. In same
pan saute onion in 1 tbs butter until tender. Add garlic, carrots, celery,
basil and parsley. Saute about 3 minutes. Add broth, beef and
potatoes. Bring to a boil. Reduce heat and cover, simmer for about 15
to 20 minutes or until carrots and potatoes are tender. Meanwhile,
melt remaining butter in a small skillet. Add flour and cook, stirring for
3 minutes. Gradually add the evaporated milk, whisking for about 6
minutes. Gradually stir sauce into the soup. Bring to a boil and cook
for 2 minutes. Reduce heat to low. Add cheese, salt and pepper.
Continue to stir until cheese melts. Remove from heat and stir in sour
