Italian Sausage Tortellini Soup

Ingredients
- 1 lb bulk Italian sausage
- 1/2 cup chopped onions
- 2 cloves garlic
- 5 cups beef broth
- 2 1/2 cups water
- 3/4 tsp dried basil
- 3/4 tsp dried oregano
- 2 tsp dried parsley
- 1 can diced tomatoes (14 1/2 oz size)
- 1 (8 oz.) can tomato sauce
- 1 1/2 cups sliced carrots
- 1 1/2 cups chopped zucchini
- 8 oz. uncooked cheese tortellini

Preparation
Step 1
Brown together sausage, onion, and garlic. Drain grease well. Put sausage mixture in soup pot and add next 7 ingredients. Cook for 30 minutes and skim off any fat. Add carrots and zucchini and cook for another 30 minutes, until vegetables are tender. Add tortellini and cook until tender, 10-15 minutes longer. Serve with a sprinkling of Parmesan cheese, if desired.
