Ingredients

  • 8 eggs, separated
  • 6 Tablespoons sugar
  • 16 ounces butter or margarine
  • 3 1/2 cups All Purpose Flour
  • 1/2 cup light cream
  • 2 1/2 cups sugar
  • 1 Tablespoon vanilla

Preparation

Step 1

1. Separate eggs and beat the egg whites until stiff with 6 Tablespoons of sugar. Set aside.

2. Beat egg yolks in separate bowl.

3. Cream margarine and sugar until well mixed. Add egg yolks that have been beaten.

4. Add flour and cream alternately into the egg yolk mixture. Add vanilla.

5. Fold in stiffly beaten egg whites.

6. Place in a large bread pan (8x4 inch pan), that’s been well greased and floured.

7. Place on 1 inch rack and bake on power level high for 60-65 minutes.

8. Checking with a toothpick to check doneness.

9. Let cool in pan for 10 minutes before removing from pan.

Tips
Place foil over the top if cake starts to brown too quickly.

Slice some of your favorite fruit or eat plain. As I mentioned above the in season strawberries are the way to go.
