Ingredients
- 1/3 cup All-Purpose Flour
- 1/2 tsp Pepper
- 1/3 cup Cooking Oil
- 1/4 tsp Red Pepper
- 3 cups H2O
- 2 cups Cooked Rice
- 12 oz Cooked Smoked Sausage Links - sliced & 1/4
- 2 cups Cooked Chicken - chopped
- 2 cups Okra -sliced (10 oz.)
- 1 cup Onion - chopped
- 1/2 cup Green Pepper - chopped
- 1/2 cup Celery - chopped
- 4 cloves Garlic - minced
- 1 tsp Salt

Step 1
ROUX
-In a heavy 2 Qrt. saucepan, stir together flour & oil till smooth. Cook over Med-High heat for 5 min., stirring constantly. Reduce heat to Med. Cook & stir constantly ˜ 15 min. more or till a drak, reddish brown roux forms. Cool.
Gumbo
-In a 3-1/2, 4 - 6 Qrt. crockery cook, place H2O. Stir in Roux. Add Sausage, Chicken, Okra, Onion, Green Pepper, Celery, Garlic, Salt, Pepper, & Red Pepper. Cover & cook on Low heat setting for 10- 12 hours or on High heat setting for 4.5 to 5 hours. Skim off fat. Server over Rice.
