Caesar Salad with Sourdough Croutons

Ingredients
- 4 anchovy fillets, finely chopped
- 2 garlic cloves, minced
- 1 TBSP. fresh lemon juice
- 1 TBSP. red wine vinegar
- 1 TBSP. Dijon mustard
- 1/1 /2 tsp. Worcestershire sauce
- 1/3 c. extra-virgin olive oil
- 3/4 c. grated Parmesan cheese, divided
- 2 large hearts of romaine lettuce, torn into bite-size pieces (about 12 cups).
- Chopped fresh Italian parsley
- 1 1/2 c. sourdough croutons
- For the croutons: toss 3 1/2 c. 1" cubes crustless sourdough bread wwith 2 TBSP. olive oil. Spread the bread cubes on a heavy-duty rimmed baking sheet and bake @ 400 degrees for 20-25 minutes.

Step 1
Whisk first 6 ingredients in small bowl. Gradually whisk in oil, then 1/2 c. cheese.
Toss lettuce, croutons, 1/4 c. cheese, and dressing in bowl. Sprinkle with parsley and season to taste with pepper.
