Ingredients
- 2 pounds potatoes, peeled and cubed
- 3 large cloves garlic, peeled
- 1 teaspoon salt
- 3/4 cup warm milk
- 2 tablespoons butter
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon crushed red pepper
- 2 tablespoons chopped fresh basil
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese

Step 1
Combine potatoes, garlic and ½ teaspoon salt in large saucepan; add enough water to cover. Boil until potatoes are tender. Drain and return potatoes and garlic to saucepan over low heat. Mash potatoes and garlic, adding remaining ½ teaspoon salt, milk, butter and olive oil. Remove from heat. Stir in red pepper, basil and mozzarella. Spoon into buttered casserole dish. Sprinkle with Parmesan cheese. Place under broiler 1-2 minutes or until golden brown.

I try a new recipe every year for the holidays and made this Monster Mash recipe, which was a big hit at dinner. I've passed this along to a friend and would definitely make it again.
