Ingredients
- 2 1/2 lbs red potatoes, washed and 3/4" diced
- 1/2 cup butter
- salt and pepper to taste
- 1/2 tsp garlic salt
- NOTE: Do not use russet potatoes for fried potatoes.

Step 1
Place the potatoes and one Tbsp of the butter in a microwave safe bowl. Cover with plastic and cook for 3-5 minutes or until cooked but still firm. Shake the potatoes in the bowl with plastic on them to distribute the butter.
Melt the remaining butter in the skillet over medium-high heat. Distribute the potatoes in the skillet; add salt and pepper. Pack down with a spatula and let cook until crispy on one side, about five minutes. Turn the potatoes, turn down the heat, and repeat the process until the potatoes are crispy throughout. Add salt and pepper to taste. Serve.
