Ingredients
- 2.5 lbs small zucchini, sliced into thin discs
- 4 cloves garlic, crushed
- 1/4 cup extra-virgin olive oil
- pinch red pepper flakes
- 2 tbsp white wine vinegar
- 1 small bunch flat leaf parsley, finely chopped
- 1 bunch fresh basil, finely chopped
- salt

Preparation
Step 1
Heat oil in a large pan over medium heat. Add garlic and cook 2-3 minutes then discard the garlic. Add zucchini and pepper flakes and saute until golden brown on both sides. Add vinegar and continue took cook until zucchini is tender. Stir in herbs and season with salt.
Serve hot or at room temperature.
