CANNELLINI****White Bean & Kale Mash

19/01/16 - I made this up on the fly as an accompaniment to a piece of rainbow trout - we both loved it! Worth a redo.

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1/4 white onion, thinly sliced
- 1 clove garlic, thinly sliced
- 3 slices microwave bacon, diced
- pinch of red pepper flakes
- salt and pepper to taste
- 1/2 head kale, stems removed and thinly sliced (I had black kale the first time)
- 1 can PC Blue Menu cannellini beans, rinsed and drained
- 1/4 - 1/2 cup chicken broth
- squeeze of lemon juice, to serve

Preparation
Step 1
Cook onion and garlic in 1/2 tablespoon oil over medium-high heat for 3 or 4 minutes until starting to brown.
Add bacon and chili flakes and stir for a minute or two more.
Add kale, beans and chicken broth and stir well. Bring to a boil, reduce heat to simmer and cover. Cook for about 1 hour, stirring once or twice and adding a tablespoon or two of additional chicken broth to keep it from drying out. When it's ready, it should be almost dry.
Just before serving, stir in the remaining tablespoon of oil and mash the beans lightly with the back of a spoon until desired texture is reached.
Squeeze a wedge of lemon over and sprinkle lightly with freshly ground black pepper and Maldon salt to serve.
I bet the leftovers would be good on toast or under a fried egg or on toast UNDER a fried egg!
