Peppered Halibut With Ginger Butter

Ingredients
- 8 tablespoons butter
- 2 teaspoons minced fresh ginger
- 1 teaspoon plus 1 tablespoon coarsely cracked black pepper (divided)
- 1 teaspoon minced garlic

- 4 halibut fillets (5 ounces each)

Preparation
Step 1
Place the butter, ginger, 1 teaspoon of the pepper and the garlic in a food processor or mixer. Process or whip until all ingredients are incorporated. Season with salt. Hold at room temperature.
Season each fillet with the remaining 1 tablespoon pepper, pressing it firmly into the flesh of the fish. Season each fillet with kosher salt. Add the olive oil to a large skillet and heat over medium-high heat until the oil shimmers.
Pan-sear the halibut, skin side up, until the fish forms a golden crust. Turn the fish over and cook until it is firm to the touch and just cooked through.
Place the fillets on warm plates and top each with an equal amount of the reserved ginger butter.
