Ingredients
- 1 LB boneless skinless chicken breasts, cut into 1/2" strips
- 2 TBL butter
- 1-3/4 C salsa
- 1 envelope )5.4oz) mexican-style rice & pasta mix
- 1 can (2-1/4oz) sliced ripe olives, drained
- 2 TBL lime juice
- 1/2 C shredded cheddar cheese
- 1 C (8oz) sour cream
- 1 med ripe avocado, peeled & cubed
- 1 med tomato, chopped

Preparation
Step 1
in lg. skillet, brown chicken in butter
stir in salsa, rice mix, olives & lime juice
bring to boil
reduce heat
cover & simmer for 8-10 min or until rice is tender
sprinkle w/ cheese
serve w/ sour cream, avocado & tomato
