Ingredients

  • 1 LB boneless skinless chicken breasts, cut into 1/2" strips
  • 2 TBL butter
  • 1-3/4 C salsa
  • 1 envelope )5.4oz) mexican-style rice & pasta mix
  • 1 can (2-1/4oz) sliced ripe olives, drained
  • 2 TBL lime juice
  • 1/2 C shredded cheddar cheese
  • 1 C (8oz) sour cream
  • 1 med ripe avocado, peeled & cubed
  • 1 med tomato, chopped

Preparation

Step 1

in lg. skillet, brown chicken in butter
stir in salsa, rice mix, olives & lime juice
bring to boil
reduce heat
cover & simmer for 8-10 min or until rice is tender

sprinkle w/ cheese
serve w/ sour cream, avocado & tomato
