Ingredients
- 1-1/2 LBS boneless beef top round steal
- 1 can (10oz) diced tomatoes & green chilies
- 1 med onion, chopped
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp chili powder
- 1 tsp grd cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cans (15-oz each) pinto beans, rinsed & drained
- 3 C hot cooked rice
- 1/2 C shredded cheddar cheese
- 6 TBL sliced ripe olives
- 6 TBL thinly sliced green onions
- 6 TBL guacamole

Preparation
Step 1
place round steak in 3-qt slow cooker
in sm. bowl, combine tomatoes, onion, garlic & seasonings
pour over steak
cover & cook on low for 8-9 hrs or until meat is tender
remove from slow cooker
add beans to tomato mixture
cover & cook on high for 30 min or until beans are heated through
when cool enough to handle, slice meat
in individual bowls layer the rice, meat & bean mixture
top w/ cheese, olives, onion & guacamole
