Ingredients
- 1/2 cup (1 stick) unsalted butter, at room temp.
- 3/4 cup smooth peanut butter
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar, tightly packed
- 1 large egg
- 1/2 tsp vanilla extract
- 1 cup all purpose flour
- 3/4 tsp baking soda
- 6 oz best quality semi-sweet chocolate, coarsely chopped

Step 1
Heat the oven to 350 degrees. In the bowl of an electric mixer fitted with paddle attachment, cream butter, peanut butter and sugars together until light and fluffy. Add egg and vanilla and mix on medium speed until combined. Sift flour and baking soda and add to the butter mixture, beating just to combine. Fold in chocolate chunks.
Using a 1 1/2 oz ice cream scoop, form dough and place on a baking sheet lined with a Silpat or parchment paper, down slightly to flatten. Bake until golden brown, 18-20 min. Transfer to a wire rack to cool. Store in an airtight container up one week.
