Everything about these pancakes is healthy and delicious! Try them with fresh blueberry syrup.
- 1/3 cup milk
- 2 cups zucchini, grated
- 3 eggs
- 1/4 teaspoon salt
- 1/4 cup honey
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking powder

Step 1: Place milk, zucchini, egg, salt, honey, cinnamon, and allspice in a Vita-Mix or other industrial blender. Turn machine to medium and blend for about 10 seconds.
Step 2: Add flour and baking powder and blend for about 10 more seconds, or until batter is smooth.
Step 3: Fry on a hot griddle until browned on both sides.
