Ingredients

  • Dressing-
  • 1 C Olive oil
  • 1/2 C cider vinegar
  • 1/2 C sugar.
  • Salt & Pepper
  • Heat until just boiling to dissolve sugar, let cool.
  • 1 C each, chopped Celery, Green Pepper, Onion (red or sweet, whatever you like.) I don't bother measuring this stuff.
  • 1 Can pinto beans with Jalepenos (in the mexican section)
  • 1 can black eyed peas
  • 1 can white shoepeg corn
  • 1 jar CHOPPED pimento

Drain the canned stuff. Make a day ahead to let marinate. Stir often, the dressing tends to separate just a bit.
