Ingredients
- Peanut Sauce:
- 4 Boneless, skinless chicken breast halves (about 1 1/2 pounds)
- 1/4 cup Soy sauce
- 1 Tablespoon vegetable oil
- 1 teaspoon packed brown sugar
- 1/4 teaspoon ground ginger
- 1 clove garlic crushed
- 1 small onion finely chopped
- 1 Tablespoon vegetable oil
- 1/3 cup peanut butter
- 1/3 cup water
- 1 Tablespoon lemon juice
- 1/4 teaspoon ground coriander
- 3 to 4 dashes red pepper sauce

Preparation
Step 1
1. Cut chicken into 3/4 inch pieces.
2. Mix chicken, soy, oil, brown sugar, ginger, and garlic in medium plastic or glass bowl. Cover and refrigerate at least 2 hours.
3. Remove chicken from marinade; reserve marinade. Thread 4 to 5 chicken pieces on each of fourteen to sixteen 6-8 inch metal skewers. Brush with chicken marinade.
4. In batches place kabobs on 4 inch rack and cook on power level high for 4-5 minutes per side, or until juices run clear.
5. Place on serving tray with peanut sauce in middle of tray and Enjoy!
