Main Dish - Stuffed Jumbo Shells

Ingredients
- 12 oz. box jumbo shells
- 1 lb. ground beef (can substitute Italian Sausage)
- 2 Tbls. olive oil
- 1 bag (6 oz) baby spinach, chopped
- 1 cup finely chopped onion
- 1 clove garlic, minced
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 1 egg
- 1/4 cup freshly grated parmesan cheese
- 1 Qt. spaghetti sauce
- 1 cup shredded mozzarella cheese

Step 1
Preheat oven to 350.
Cook shells according to package. Drain, but reserve 1/3 cup of the pasta water.
Cook ground beef in large skillet over medium high heat. Add oil, spinach, onion, garlic, reserved pasta water. Cook 10 minutes, stirring occasionally. Remove from heat and add spices. Blend well. Let cool, then add egg and parmesan cheese.
Pour 1 cup sauce in 13 x 9 pan. Fill jumbo shells with meat mixture. Place in pan. Cover with remaining sauce and mozzarella cheese.
Cover with foil and bake for 30-45 minutes or until heated through.
