Ingredients

  • 1 can Whole Black Pitted Cherries in Natural Juice (15 oz.)
  • 4 Lrg. Boneless Center cut Pork Chops - 1-1/2" thick
  • Salt & Pepper
  • 2 Tbs Olive Oil
  • 1 Lrg. Shallot - chopp’d finely
  • Splash of Brandy
  • 1/2 cup Chicken Stock
  • 2 Tbs Butter - cut into pieces
  • 3 Tbs Fresh mint leaves - finely chop’d

Preparation

Step 1

1 PreHeat oven to 375°.

2 Heat a skillet w/ a oven safe handle over Med-High to High or place in oven to heat.

3 Season chops w/ Salt & Pepper. Add (1) tbsp. Olive Oil, 1 turn of the pan, to a hot skillet. Place chops in skillet & sear meat on both sides to caramelize the chops. Place a loose tin foil tent over the pan & transfer the chops to oven to finish off, 7 to 8 min., until meat is firm to touch, but not tough.

4 Remove meat from oven & transfer to dinner plate. Cover chops w/ foil to keep warm. Place chop skillet on stove over Med. heat. Add a tbsp. Olive Oil, 1 turn of pan. Add Shallots & sauté 1 to 2 min. Add Cherries & warm through. Add Brandy by removing the pan off the burner to add the alcohol, then flame the pan. Burn off alcohol for 1 min., then add stock. Reduce stock a minute, then add Butter in small pieces. Toss sauce to combine & sprinkle in mint.

5 Pour sauce down over chops & serve.
