Ingredients

  • 1 cup of nuts, soaked for 6 hours (cashews, almonds, hazelnuts and brazil nuts all work)
  • 1 cup almond or cashew yogurt
  • 1/2 cup water
  • 1 tsp salt
  • 3 Tbsp tapioca starch
  • 1 Tbsp agar

Preparation

Step 1

1. Once the nuts have been soaked, place all of the ingredients in a blender. Blend until well mixed.
2. Pour the mixture into a skilled or sauce pan and cook over medium-low heat.
3. While heating, stir the mixture continuously.
4. When the mixture begins to have a 'stretchy' texture, remove from the heat.
5. Pour the mixture into a mold of your choice (a bowl works just fine)
6. Place a piece of plastic wrap over the mold and press it to the top of the cheese. This will ensure that there is no film on the top.
7. Place in refrigerator and fully cool.
***The cheese will be good for 6-7 days, kept in the refrigerator
