Ingredients

  • 1 cup nuts of your choice (cashes, almonds, hazelnuts, brazil nuts all work)
  • 1 cup almond or cashew yogurt
  • 1/2 cup water
  • 1 tsp salt
  • 3 Tbsp tapioca starch
  • 1 Tbsp agar

Preparation

Step 1

1. Soak the nuts in water for 6 hours.
2. Once the nuts are ready, place all of the ingredients in a blender and mix well.
3. Pour the mixture into a skillet or sauce pan and heat over medium-low heat.
4. Stir continuously. Once the mixture gets "stretchy", remove from the heat. Pour the mixture into a mold of your liking (a regular bowl will work)
5. Let the mixture cool for a little while. Then place plastic wrap over the mold, pressing the wrap to the top of the vegan cheese, to prevent a skin from forming on the top.
6. Place in the refrigerator until cooled and serve.
***The cheese will be good for 6-7 days in the refrigerator
