Ingredients
- 2-3 large cloves garlic
- 2 oz. jar diced pimentos
- 3 cups coarsely grated sharp cheddar cheese
- 1/3 to 1/2 cup mayonnaise

Step 1
Force garlic through garlic press into a bowl. Stir in pimentos (with liquid). Add cheddar cheese and toss mixture to combine. Stir in mayonnaise to taste and season with freshly ground black pepper.
Cheese spread may be made one day in advance and chilled covered. Bring to room temperature before serving.
