Margaret's Mediterranean White Bean Dip

Ingredients
- 15 ounce can of white beans,
- drained and rinsed
- 1 Tablespoon + 1 teaspoon lemon juice
- 1-2 Tablespoons olive oil
- 2 cloves crushed garlic
- 1/4 teaspoon oregano
- 1/8 teaspoon black pepper
- 2 Tablespoons chopped black olives
- 2 Tablespoons chopped parsley

Preparation
Step 1
Place all ingredients except the olives and parsley in a blender and puree until smooth, adding a teaspoon or so of water if needed. Pour into a shallow dish. Toss the black olives and parsley together, and spread over the bean mixture. Serve at room temperature or slightly warmed in a microwave. Serve with celery sticks, herbed pita bread or chips, or triscuit crackers.
