Ingredients
- 1 cup rolled oats
- 1/3 cup butter
- 1/3 cup shortening
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tsp baking soda
- 2 eggs
- 1 tsp vanilla
- 1 cup all purpose flour
- 1 cup coarsely chopped walnuts
- 1 cup chocolate covered raisins

Preparation
Step 1
For oat flour, place 1/2 cup rolled oats in a blender container or 1 cup in a food processor bowl. Cover and blend or process till oats turn into a powder. Transfer powder to a small bowl. If using a blender, repeat with remaining 1/2 cup rolled oats. Set aside.
Beat butter and shortening in a large mixing bowl with an electric mixer on med-high speed for 30 seconds. Add granulated sugar, brown sugar and soda; beat till combined, scraping sides of bowl occasionally. Beat in eggs and vanilla. Beat in oat flour and all purpose flour. Stir in other 1 cup rolled oats, walnuts and raisins.
Drop dough by well rounded tsp 2" apart on an ungreased cookie sheet. Bake in a 350 degree oven for 8-10 min or till edges are lightly browned.
