Ingredients

  • 2/3 cup long grain white rice
  • 1 cup Velveeta cheese, cubed
  • 2 Tbls. parsley
  • 1 egg, beaten
  • 1/2 cup soft bread crumbs
  • 2 Tbls. minced onion (dried)
  • 1-1/2 tsp. seasoned salt
  • 1/8 tsp. pepper
  • 1-1/2 lbs. lean ground beef

Step 1

Prepare rice as directed on box. Stir in cheese and parsley. Set aside.
Mix together egg, milk, bread crumbs, onion, salt and pepper. Add beef and mix well. Turn meat onto waxed paper and shape into 10 x 12 rectangle. Evenly spread rice mixture over meat. Press firmly, leaving 1” uncovered at each end.

Roll meat up in a pinwheel, removing wax paper.*(see note below)

Place seam side down in shallow baking dish. Bake at 350 degrees for 45-60 minutes. Garnish with catsup/barbecue sauce and grated cheese if desired. Cut into thick slices

* I wrap in foil and refrigerate overnight. Then slice into thick slices and set in 13 x 9 pan and bake as above (40-50 minutes)
