Desserts - Zuchinni Pie

Tastes just like Dutch Apple Pie. A good way to use those larger sized zucchini when the garden gets out of control! I have actually canned the filling in quart jars which is enough to make a pie!

Ingredients
- Crumb Topping (mix until crumbly):
- 4 cup zucchini (peel, cut lengthwise, scoop out seeds, slice to resemble apple slices)
- 1-1/2 tsp. cream of tartar
- 1 Tbls. Butter
- 1 Tbls. Lemon Juice
- 1-1/4 cup sugar
- 1-1/2 tsp. cinnamon
- 2 Tbls. Flour
- Dash nutmeg
- 1 – 9” unbaked pie shell
- 1 stick butter/margarine
- 1/2 cup sugar
- 1 cup flour
- Cook zucchini in a small amount of water for 10 minutes. Drain.
- Mix cream of tartar, 2T flour, lemon juice, nutmeg, 1-1/4 cup sugar, cinnamon. Fold into cooked zucchini.

Step 1
Pour into unbaked pie shell. Mix topping ingredients and put over top of zucchini mixture. Bake at 375 degrees for 45 minutes.
